History

Mirabella is a historic Franciacorta company, located in Rodengo-Saiano, in the province of Brescia. At the basis of their production philosophy there is respect and care for nature and its fruits, and the wholesomeness of the wine produced with respect for man and the consumer. Three oenologists form the basis of Mirabella, Teresio Schiavi, the heart and founder of the company and his two sons Alessandro and Alberto, who are today respectively Cellar Master/Sales Manager and Marketing Manager of the company.

Production method

The grapes are harvested manually, in order to preserve their quality. The grapes are selected both at the time of harvest and immediately after arrival in the cellar on a sorting table; only the oldest and most valuable grapes of the estate contribute to the production of this wine. After the soft pressing of the grapes, these undergo a first process of alcoholic fermentation separately according to the variety, obtaining the base wine which will then be refermented. 70% is vinified in concrete vats, 30% in barriques with batonnage for 4-5 months. The second fermentation, on the other hand, takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked). The wine remains on the lees for at least 85 months and is disgorged at least 6-7 months before being placed on the market.

Tasting notes

Deep golden yellow color with antique gold reflections. Decisive, intense and majestic on the nose, with notes of chestnut honey, vanilla, candied apricots and citrus fruits, exotic fruit and minerality. On the palate the wine is robust, enveloping and full, with beautiful notes of spice and very ripe fruit; everything is balanced by a decisive freshness and a nice sapidity. The finish is very long and pleasant.

Possible combinations

DØM is the maximum and vintage expression of Mirabella, produced in very limited quantities compared to the other lines. Excellent in combination with important dishes also based on red meat and flavored with truffles, or it becomes masterful as a meditation wine or for important toasts with special people.
