Description
History
The Leone de Castris company, founded in 1665 by Oronzo Arcangelo Maria Francesco dei Conti di Lemos, is one of the longest-lived in Italy. In 1943 the winery created the legendary Five Roses, the first rosé bottled in Italy, thus renamed by an American general who asked for a large supply to be sent to the United States. Today the production includes about 2.5 million bottles and combines the traditional vines with international vines such as Chardonnay and Sauvignon. The commercial network exports their products all over the world.

Production method
The grapes are harvested by hand around the last ten days of August, in order to maintain a good acidity content. They are then dried on racks for about a month in a well-ventilated place where the temperature can be controlled. After drying, the grapes are softly pressed and fermentation takes place at a controlled temperature; this is interrupted to maintain a good sugar content obtaining a sweet wine. The wine ages for 6 months in barrique and for 6 months in bottle before being put on the market.

Tasting notes
At the sight a deep golden yellow color. Notes of dehydrated apricot on the nose, with notes of aromatic herbs, jasmine, vanilla and toasting. On the palate the wine is full, slightly viscous and soft, with a good structure and a fresh final acidity, which very much balances the sip together with notes of spice.
Possible combinations
Leone de Castris Fiano Pierale is perfect in combination with apricot or orange marmalade tarts, with desserts with candied citrus fruit or custard. Also ideal as a meditation wine at the end of the day.
