Description
History
Palmento Costanzo is a winery located in Contrada Passopisciaro in the Etna Valley in Sicily, rebuilt and restored by the Costanzo family in 2011. The winery uses 4 egg-shaped wooden containers to refine the wines in a genuine and natural way. The family’s goal is to enhance the production of Etna wines in the world through the manual selection of the grapes and the use of modern winemaking techniques, exploiting the microclimate and volcanic soils. The wines have the label embossed with black volcanic sand from Etna to demonstrate their link with the area of origin.

Production method
The wine is produced using grapes from a 1910 pre-phylloxera sapling vineyard in a soil of volcanic sand and stones with chestnut trees. The vines are located at a high altitude of 680-750m and the harvest is manual. The wine ferments and macerates in 5hl rotary barrels, before carrying out the malolactic fermentation. After 24 months of aging in French oak barrels and a further 12 months in the bottle, the wine is ready for marketing.

Tasting notes
Intense red wine, with notes of ripe fruit, ash, mint, tobacco and coffee. Vibrant and powerful, with ripe tannins and a spicy finish.
Possible combinations
“Prephylloxera” is a unique wine of its kind, coming from a special vineyard which is more than 100 years old and which has never been explanted or attacked by phylloxera. Capable of expressing a unique depth, it is certainly ideal as a meditation wine. Wine with a unique and extraordinary longevity. In combination it makes its best with tasty and long-cooked meats, be it red meat or game, or with aged cheeses.
