Description
History
The story of Firriato began in the 80s thanks to Salvatore Di Gaetano who was attracted to a very particular place, the district of Firriato just outside the city of Trapani; a magical place that has always been linked to the cultivation of vines and marked by the sea on one side and the fortress of the city of Erice on the other. He therefore decides to start again from the vineyard by planting the first vineyards of Nero d’Avola, Catarratto and Inzolia with the desire to obtain wines of great territorial expression and quality, something that was practically not yet done in the Trapani area. In those years, Di Gaetano and Firriato’s family will be among the main interpreters of this wine “revolution” that Sicily will go through by making its wines known as products of great quality and easily identifiable by style and quality.

Production method
The pressing of the unstemmed bunches is soft, the vinification takes place inside the cellar created in the typical Etna farmhouse dating back to the seventeenth century. Fermentation is at controlled temperature and refermentation in the bottle according to the “classic method”.

Tasting notes
Straw yellow color with golden notes. On the nose, great marine sapidity with sulphurous and volcanic notes, yellow peach and flowers, with hints of bread making. On the palate large breadth and structure, the saline notes expressed on the nose are resumed; long and enveloping finish, very fine bubbles.
Possible combinations
Absolutely for an aperitif, perfect with canapés, savory pies, also with fish dishes and with butter and sage ravioli.
