History

Domaine Drouhin is today the largest and most extensive estate in all of Burgundy and can count on 80 hectares of land divided as follows: 38 hectares in Chablis, 38.5 hectares in Côte de Nuits and Côte de Beaune, 3.5 hectares in Côte Chalonnaise. Within these, most are vineyards classified as Premier and Grand Crus, all planted with Pinot Noir and Chardonnay. The “domaine” was expertly built over the years by one of the most important families in the French wine scene, thanks to targeted purchases and agreements between local families; some vineyards are counted among the most famous in Burgundy such as Clos des Mouches, Montrachet Marquis de Laguiche, Musigny, Clos de Vougeot, Corton-Charlemagne and others. Since the 2008 harvest, the name Vaudon has been associated with Joseph Drouhin for all his Chablis wines as a sign of the historical link with the territory.

Production method

The marc brandy, or pomace, is defined by the Community Regulation as an alcoholic beverage obtained exclusively from the fermentation and distillation of the marc, through the use of water vapor or with the addition of water. It is necessary that each single distillation does not exceed 86% in volume and that the first distillation takes place in the presence of the pomace itself. In addition to these fundamental requirements, the legislation indicating that it is permitted to add to the marc a quantity of lees not exceeding 25 kg for every 100 kg of marc used, with a quantity of alcohol deriving from the lees which in any case does not exceed 35% of the total alcohol in the finished product.

Tasting notes

Fawn colour. On the nose, aromas that recall flowers and fruit are clearly distinguished, interspersed with pleasant notes that develop towards spicy tones. On the palate, it has an excellent body, structured and enveloping, giving a warm sensation, with a finish that pleasantly persists.

Possible combinations

It is indicated as an after-dinner or digestive, or for moments of relaxation, preferably in company! Perfect as a gift for someone special.
