Description
History
DePaz is a very important distillery in Martinique, of which we have news since 1651. The distillery is located on the slopes of Mont Pelée and is, among others, the only distillery to have been rebuilt after the tremendous volcanic eruption of 1902 which shook the island; the name DePaz is given by Victor Depaz, the man who financed and wanted the reconstruction. Its plantations extend over 400 hectares and the volcanic soils, the alternating rains and sun influence the conformation of this extraordinary and unique terroir.
Production method
To produce an agricultural rum, the starting “base” is given exclusively by the distillation of pure fermented sugar cane juice. This is a procedure that was adopted for the first time in the Central American islands of former French domination, especially Martinique. Usually from this procedure more complex and elegant products are obtained, characterized by notes that tend to be drier and more dry than the rest of the rums.

Tasting notes
Golden yellow color with amber notes. Notes of ripe fruit on the nose, with notes of mint, balsamic and boisé alternating with sweet spices. On the palate it is pleasantly viscous initially, only to find a nice freshness and alcohol on the finish.
Usage
Perfect as an end of meal or meditation, suitable for collectors or for a special gift!
