Description
History
The Cupelli company, located in San Miniato, has been cultivating vines since 1952 and produces high quality IGT wines, including Vin Santo Toscano, using native vines such as Trebbiano Toscano, white Malvasia, Colombana, Canaiolo, Sangiovese and Ciliegiolo. The company began an ambitious project on native varieties in 2008, carefully cultivating the vineyards to interpret its grapes again and differently in its classic method sparkling wines.

Production method
The winemaking process begins with a soft pressing, fermentation at controlled temperatures in a concrete vat.
The second fermentation is in the bottle with permanence on the lees for at least 36 months. Aging in the bottle for at least 3 months after disgorgement.

Tasting notes
yellow color with slight green reflections, fine, light and persistent perlage. Intense and fresh bouquet fruity notes of peach and green apple delicately combined with fragrances of white flowers. Clean and harmonious taste, excellent acidity and a pleasant bread crust finish.
Possible combinations
Perfect with hors d’oeuvres, medium-aged cheeses and cured meats, white meat and fish dishes.
