Production method
After the harvest, the bunches are subjected to a maceration of about 14 hours at a temperature of 10°/12°C, in specific containers. During this process, innovative systems are adopted to protect the grapes from oxygen, through the recycling of their own carbon dioxide produced during fermentation, with the aim of reducing the intake of antioxidants. The must ferments and ages on the lees for a period of 5 months, partly in large 20/27 HL wooden barrels and partly in stainless steel containers.

Tasting notes
Greenish yellow colour. The nose perceives a pleasant and delicate bouquet, characterized by the scent of wild flowers. The distinctive aromatic notes of Golden apple and Kaiser pear blend harmoniously with citrus hints. On the palate it stands out for its exceptional freshness, typical of the grape variety, and an almost saline flavor that is accompanied by a slight mineral nuance. The citrus notes emerge again and develop together with an elegant acidity, completing the tasting in a balanced way.
Possible combinations
Perfect for pairing with savory but delicate first courses, such as spaghetti with seafood, first course with seafood, oysters and shellfish. Also perfect with a nice mixed fry, as it has a good acidity. Alternatively, also excellent as an aperitif, especially on warm spring/summer evenings.
