Description
History
Fontodi has been owned by the Manetti family since 1968, which instead comes entrepreneurially from the famous terracotta sector. The decision to also invest in wine and specifically in the Chianti Classico of Panzano derives precisely from this strong link with the Tuscan territory and from the desire to enhance the quality production of the region’s excellence, especially Sangiovese. The company is certified organic and covers 170 hectares of land of which just over 80 are planted with vineyards. All the agriculture practiced adheres to principles of respect for the vineyard, the environment and nature and sustainability is the watchword in Fontodi: we try not only to avoid in the most categorical way the use of chemical products harmful to the health of the environment, but rather to use as much material as possible from the company itself. For example, the vineyards are fertilized using a compost of pruning residues and manure that comes from the internal breeding of Chianinas. The cellar is very modern and develops vertically in order to exploit the force of gravity for carrying out the various stages of vinification which allows to maintain a greater integrity of the fruits and to obtain “healthier”, fragrant and intense wines.

Production method
After harvesting, destemming and crushing, the grapes are placed in stainless steel containers where they ferment thanks to the presence of indigenous yeasts naturally present on the skins. Fermentation on the latter lasts for at least 2 weeks with frequent punching down. After this procedure, the wine ages for 24 months in Allier and Troncais French oak barriques, with a further period of rest in the bottle before being placed on the market.

Tasting notes
Intense ruby red color, with a garnet edge. On the nose notes of ripe red fruit, cherry, ripe berries, slightly dried violets, herbaceous hints, roasting spices, coffee, black pepper and cloves. In the mouth it is lively, enveloping and ample with great acidity, elegant but lively tannins and a mineral base. Definitely long and fruity finish, with hints of spices too.
Possible combinations
Fontodi is a great classic Chianti that has been able to carve out a large slice of admirers over the years thanks to the quality expressed in the glass and its rigorous attention to respecting the principles of organic and eco-sustainable agriculture. Also for these reasons it becomes a wine to be appreciated by the glass too, for lovers of Sangiovese di Panzano. In combination it is excellent with well-structured first courses with meat sauce or with red meats in general. Also excellent with selections of medium-aged cheeses.
