Description
History
Soutiran is a small family house, located in the commune of Ambonnay, in the southern part of the Montagne de Reims. Founded in 1969, the company can now count on the leadership of Patrick and Valerie Renaux, who represent the third generation. The family owns six hectares in Ambonnay, an area of excellence for the production of powerful and gourmand wines, and carries out a small shop business, purchasing a modest quantity of grapes from farmers, owners of vineyards classified as Grand Cru and Premier Cru, always operating all interior of the Montagne de Reims.

Production method
It is produced according to the so-called champenoise method or classic method, a method in which the wine undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in fermentation vats; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles once uncorked).

Tasting notes
Amber yellow color with persistent perlage. On the nose note of small fruits, great verticality and minerality. On the palate it is powerful, vertical with notes of yellow pulp fruit.
Possible combinations
It goes well with red meat dishes, game, hard cheeses and mushrooms. It can also be accompanied in a more combination by hot and spicy dishes. It is a great choice for elegant dinners and for celebrating special occasions. Thanks to its complexity and structured body it manages to balance the intense and robust flavors of meat dishes.
