History
David Leclapart has a total of 3 hectares in 22 different plots, which are divided into the municipality of Trepail, Premier Cru of the Montagne de Reims. Upon his father’s death, David returned to the company only on one condition: to conduct all of the company’s agriculture to biodynamics, without compromise – for him the only way to respect and highlight the natural characteristics of the champagne and the terroir. The choice of never dosing any champagne is also difficult, an aspect that highlights the slightest stylistic imperfection. It is one of those that in recent years has suffered the most from problems related to climatic trends, in fact Artiste and other products will no longer be released until 2024.

Production method
It follows the principle of biodynamics, performs malolactic fermentation and the second fermentation takes place in the bottle with a stay on the lees for at least 60 months before disgorgement. No Dosage.

Tasting notes
Straw yellow color with fine perlage. On the nose it is incisive and full of hints of mint and spices, almond and toasted bread. The taste is complex and fresh, structured, with a very long and mineral finish.
Possible combinations
Ideal pairings: smoked fish, risotto with vegetables or seafood and fish dishes.
