Description
History
was born in 1974 in Villers-sous-Châtillon, in the Champagne region, thanks to the passion of Fernand and Roselyne Minière. The production is characterized by a traditional cultivation of the vines, with particular attention to the quality of the grapes and respect for nature. Today, the business is run by Fernand and Roselyne’s son, Laurent, who continues the family tradition.

Production method
Alcoholic fermentation in steel tanks at a controlled temperature, followed by malolactic fermentation and the assembly process. Finally, the Champagne is bottled with a blend of yeast and sugar for refermentation in the bottle.

Tasting notes
Salmon pink color, while the nose perceives aromas of strawberries, cherries and berries, accompanied by notes of yeast and bread crust. On the palate, the wine is fresh and lively, with a pleasant acidity that goes well with the sweetness of the red fruits and the complexity of the toasted notes. The long maturation on the lees in the bottle helps to give the wine a delicate creaminess, while the minerality and freshness of the finish leave a pleasant aftertaste.
Possible combinations
Thanks to its structure and balance, it can also be paired with light meat or cheese dishes.
