Description

History

Antoine is the nephew of Guy Bouvet, who founded the homonymous company in 1970. He owns and works on vineyards mainly near Epernay, in the heart of the Montagne de Reims. It uses biodynamic methods and each cuvée does not reach more than 1000 bottles.

Production method

It is produced according to the so-called methode champenoise or classic method, a method in which the wine undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in vats for fermentation; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked).

Tasting notes

Straw yellow color with elegant perlage. On the nose notes of yellow fruit, flowers, spices and mineral sensations. Great evolution of aromas in the mouth, with a nice verticality.

Possible combinations

Perfect with delicious aperitifs or tasty fish or white meat dishes.
