History
The company is based in Ay, and has been in the hands of the Delouvin family for five generations. The maison has 6.93 hectares scattered in the legendary villages of the Val de Marne area and produces Champagne only from grapes grown on the property. The cultivated vines are the classic Pinot Noir, Pinot Meunier and Chardonnay. The company motto is respect, quality and modernity. In fact, they are HVE (High Environmental Value) certified with the aim of preserving the environment and biodiversity.

Production method
Champagne is produced in the Champagne region of France. The production method involves fermentation in the bottle with the addition of sugar and yeast. After fermentation, the wine is left to rest on the lees for at least 15 months. The process of removing the yeasts, called “removal”, takes place with the inversion of the bottles and the subsequent addition of dosing liquid. The dosing liquid, a blend of sugar and wine, determines the sweetness level of the champagne. Finally, the bottles are sealed with a mushroom cap and left to rest for a few months before being marketed.

Tasting notes
Straw yellow color stands out for its clarity. The floral scents emerge on the nose. On the palate the combination of the three grape varieties gives the right freshness and great balance.
Possible combinations
Perfect when paired with oysters, smoked salmon, soft cheeses and seafood, also excellent as a sophisticated aperitif.
