Description
History
The Maison Salon was founded by Eugène-Aimé Salon, who only after making a name for himself with the leather trade decided to buy a vineyard in Le Mesnil-sur-Oger the best Cru of the Cote de Blancs. Aimé always remained attached to his homeland and what he had dreamed of since he was a child was to make an excellent Champagne, his own Champagne. Its first release is with the 1905 vintage in 1911, but it was an “intimate” production intended for a rapidly growing group of friends and Champagne enthusiasts. 1920 is the official date of the creation of the Maison, and from then on Salon will spread to the most sought after circles but it is from 1928 after a great thousandth that the Maison will have its consecration. From then until today, the Maison has never changed its signature: only exceptional vintages are destined for vinification and marketing, in a quantity that continues to be very limited.

Production method
The harvest begins in mid-September after an excellent year, the care and precision of how it is carried out is the company’s trademark. It is then produced according to the so-called methode champenoise, a method in which the wine essentially undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in vats for fermentation; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked). In this case we are looking for the greatest expression of the champagne which remains and evolves for many years on the lees, in fact in this version, the wine spends at least 10 years before the so-called dégorgement.

Tasting notes
Salon Cuvée “S” 2012 is an extraordinary bubble, to the eye it has a clear and bright gold color, with a fine and very persistent, very elegant perlage. The nose is characterized by a chalky minerality, typical of those lands, with floral notes of spicy rose. after proper oxygenation it releases notes of pineapple and lychee with hints of smoked. In the mouth, its elegance is the protagonist, characterized by a fresh and elongated body, endowed with a majestic acidity that provides for excellent aging.
Possible combinations
It is the ideal companion for a special evening with friends and/or special people. It is not really important what is paired with it as it is able to elevate every moment in which such a bottle is tasted to a new level; if you really had to combine something, a very important and spicy meat or fish dish, even cooked for a long time, is better.
