Description
History
The history of this maison begins in 1743 when it was founded by Jacques Fourneaux; the Forneaux family continued to operate in this sector with great results, joining forces with Antoine Forest, giving life to the company “Forest-Forneaux” and constantly increasing its success. After almost 2 centuries, in 1932 Pierre-Charles Taittinger bought the company and, in addition to giving it his family name, gave a key role to Chardonnay in the production of blends. This will be found in particular in the release, following the trends of the historical period and under the guidance of his son Francois Taittinger, in 1952, of the “Comtes de Champagne”, the first cuvée de Prestige of the Reims area entirely produced with Chardonnay. Today the company has been led by Pierre-Emanuel Taittinger since 2005, direct descendant of Pierre-Charles head of the company we find, with about 288 hectares of property.

Production method
It is produced according to the so-called methode champenoise or classic method, a method in which the wine substantially undergoes two different fermentations: the first, the alcoholic one (which it shares with the rest of the wines) takes place in vats for fermentation; the second instead takes place directly in the bottle and ensures that during this second procedure, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles when uncorked).

Tasting notes
It is presented in the glass with a golden straw yellow color, with a fine and persistent perlage, very elegant. On the nose the wine has hints of ripe peach in spirit, candied fruit, yellow flowers but above all notes of yeast, melted butter, hazelnut and toasted almond, sweet tobacco, dry pastries. Powerful but balanced in the mouth, ripe but also fresh and mineral, very long and persistent finish. Truly one of the best Blanc de blancs on the market. Specifically, the 2008 vintage aged for about 12 years in the company’s cellars.
Possible combinations
Ideal if combined with fish tartare and fatty and buttery foods in general. Rare and prestigious Cuvée, known throughout the world, recommended for lovers of blanc de blancs; it is also an excellent idea as a meditation wine, an ideal companion for special moments.
