Description
History
Castello di Ama is a historic winery located in the heart of Chianti Classico, with a tradition dating back to the 1700s. The estate is renowned for its constant pursuit of excellence, from grape cultivation to winemaking. The San Lorenzo, produced only in the best years, embodies the philosophy of Castello di Ama, combining traditional Sangiovese with modern innovation. The highest-quality vineyards and sustainable practices form the foundation of this wine.

Production Method
The grapes are hand-harvested and carefully selected. Fermentation takes place in small stainless steel tanks with maceration for about 20 days at controlled temperatures. Afterward, the wine matures for about 18 months in French oak barriques, with a percentage of new wood that enhances the complexity of the wine without overpowering the fruit.

Tasting Notes
Intense ruby red color with violet reflections. The nose offers complex aromas of ripe red fruits, black cherries, plums, and subtle notes of spices, tobacco, and vanilla from oak aging. On the palate, it is powerful and structured, with soft, well-integrated tannins, and a freshness that perfectly balances the wine’s concentration. The finish is long and persistent, with notes of ripe fruit and a hint of black pepper.
Food Pairing
Perfectly pairs with roasted meats, braised dishes, Florentine steaks, game meats, and aged cheeses like Pecorino Toscano. Also excellent with mushroom risottos and typical Tuscan dishes.
