Production method
The vineyards from which the grapes with which this wine is produced come are located at various altitudes: 200, 300 and 450 m above sea level. The grapes are harvested manually with careful selection of the bunches. Fermentation takes place in wooden barrels thanks to indigenous yeasts. The aging takes place in oak barrels of about 30 l for a period of 40 months, with a further rest in the bottle for another 12 months. The wine is not filtered before bottling.

Tasting notes
At sight the wine is dark ruby red with a garnet edge. On the nose notes of ripe spices of tobacco, vanilla, coffee, roasting and licorice, with notes of delicate ripe red fruit of blackcurrant and raspberry, aromatic herbs, cedar and dried flowers. On the palate the wine is robust, enveloping and delicate, with a great structure, silky but always lively tannins and a fresh and surprising acidity.
Possible combinations
Excellent as a meditation wine, as it manages to express itself over time. However excellent with important dishes based on red meat or aged cheeses, or with substantial gourmet preparations.
