History
In the heart of Burgundy, in the Meursault region, lies the Domaine Fabien Coche, a wine estate extending over 12 hectares and including vineyards located in Meursault, Pommard, St Aubin, Auxey-Duresses, Monthelie, Saint Romain and Montrachet. A special feature is the centuries-old vines of the “Lieu Dit Limozin” in Meursault, which are more than 100 years old.
The company was founded in 1973, when the Domaine Coche, dated 1920, was divided into Coche Bizouard and Coche Dury. Today they produce as many as 28 wine denominations. The estate adopts an organic agricultural practice, working the land since 2001 and using indigenous yeasts. Since 2003, the wines have not been filtered or clarified. We aim for low yields in cultivation. The treatments for the vines are carried out organically, using only copper and sulfur. Starting in 2020, the focus is on biodynamic viticulture. The soils are characterized by a combination of clay, limestone and a slight presence of marl.

Production method
Chardonnay in Burgundy is produced through traditional vinification, with fermentation in oak barrels and aging on the lees for 12-18 months. The resulting wines are characterized by freshness, minerality and complexity, with the ability to age well in the bottle.

Tasting notes
Intense straw yellow color with greenish reflections. On the nose you can appreciate seductive fragrances of white peach, lime, yellow apple, acacia flowers and hazelnut, together with subtle mineral hints. On the palate it is a full-bodied wine with a rich volume, with an extraordinary freshness and sapidity that herald an extremely persistent and coherent finish.
Possible combinations
Its ideal combination is with white meat dishes, especially poultry, but it also goes perfectly with fish and cheeses.
