History

Domaine Drouhin is today the largest and most extensive estate in all of Burgundy and can count on 80 hectares of land divided as follows: 38 hectares in Chablis, 38.5 hectares in Côte de Nuits and Côte de Beaune, 3.5 hectares in Côte Chalonnaise. Within these, most are vineyards classified as Premier and Grand Crus, all planted with Pinot Noir and Chardonnay. The “domaine” was expertly built over the years by one of the most important families in the French wine scene, thanks to targeted purchases and agreements between local families; some vineyards are counted among the most famous in Burgundy such as Clos des Mouches, Montrachet Marquis de Laguiche, Musigny, Clos de Vougeot, Corton-Charlemagne and others. Since the 2008 vintage, the name Vaudon has been associated with Joseph Drouhin for all his Chablis wines as a sign of the historical link with the territory.

Production method

The chardonnay grapes come from some key areas identified by Robert Drouhin, of which Northern Burgundy for its freshness and verticality, Côte d’Oro for its finesse, Mâconnaise for its fruity notes. The wine has been called LaForêt (the forest) as a synonym of quality and elegance, with reference to Robert Drouhin’s passion for nature. The grapes are harvested by hand and softly pressed, with a subsequent cold decantation of the must. The vinification takes place in steel, the refinement partly in stainless steel for 7-8 months, the remainder in used wooden barrels so that the wine fully expresses its potential and balance.

Tasting notes

Intense straw yellow color with greenish reflections. Balanced, intense and decisive nose with notes of cedar, citrus and grapefruit, aromatic herbs and straw, green almond and minerality. On the palate the wine is characterized by fruity notes, good substance and elegance, with very fresh notes on the finish!

Possible combinations

LaForêt Chardonnay is an entry-level white Burgundy, a blend of chardonnay from various areas of Burgundy in order to recreate a balance and travel throughout the region with a single drink. The wine is perfect as an aperitif given its exquisite freshness, but it is also excellent with fresh and/or medium-aged cheeses, with raw or tasty fish dishes or alternatively with tasty first courses.
