Years ago the mayor of Cervins, in Haute-Savoie, decided to implement agriculture on the vineyard terraces overlooking the village to combat the depopulation of the valley. In 1997, with this intention, he almost casually turned to Michel Grisard, a pure biodynamic farmer from Savoy and Brice Omont, an agronomic engineer with an important curriculum (including a past in Krug in Champagne). Mixed native varieties were replanted on a total of sixteen hectares near Albertville and Moutiers. Twenty years after the project, the Domaine is establishing itself as one of the most interesting realities in all of Savoy.
Hand harvested and spontaneous fermentation thanks to indigenous yeasts.
Straw yellow with greenish reflections. On the nose notes of yellow and white fruit, with white flowers and great minerality.
Excellent as an aperitif or in combination with cheeses.
