Description
History
Jean-Michel founded Domaine de la Renardière in 1990, acquiring new land and recovering part of the family vineyards in the Jura region of Pupillin. A nature lover and attentive to the soils and history of the area, he produces fresh, mineral and highly drinkable wines, which express the authenticity of the area and the personality of the producer. In recent years, his son Léo has joined his father by introducing new wine vessels in the cellar and giving voice to parcels such as the Charodnnay 1966 and the Ploussard 1983. Their attention to biodynamics and experimentation makes Domaine de la Renardière a company that represents the true regional reality.
Production method
Chardonnay is produced through soft pressing of the whole grape, static decantation for 24 hours, followed by spontaneous fermentation and ouillé refinement in barrique for 18 months according to the vintage. The soils are clayey-limestone.

Tasting notes
Intense straw yellow color with greenish and golden reflections. The nose reveals notes of butter, vanilla and toasted almonds, fresh and savory. On the palate it is soft, round and complex with hints of orange peel, notes of dried fruit and chalky sensations. The balanced acidity gives a sensation of freshness and long persistence.
Possible combinations
Its ideal combination is with dishes based on white meats, especially poultry, legumes but it also goes perfectly with fish and cheeses.
