Description

History

The Chiarli family has been producing wines in Emilia for five generations, with the first documents and honorable mentions dating back to 1860-1900. In the first 50 years of the 1900s, the second generation of the family worked very hard to spread Lambrusco and its knowledge in Italy and abroad; the historic Modena Cellar was created in 1925, which still today, albeit restructured, is the company’s historic headquarters. With the advent of the third generation, large autoclaves began to be introduced for sparkling wine with the charmat method at controlled temperature, which will allow for more fruity and delicate wines to be obtained; it’s circa 1970. With the fourth generation we see the birth of the Lambrusco DOCs and the confirmation of the high quality standards that allow the company to distinguish itself from its main competitors, also keeping faith with the original principles dictated by Cleto Chiarli. In 2000 the Cleto Chiarli project was created and the Lambrusco Premium, Vigneto Cialdini and Lambrusco del Fondatore labels were launched, able to “tell” Lambrusco in all its nuances.

Grapes used

Local grape must (mainly Lambrusco grapes)

Production method

It starts from local grapes, mainly Lambrusco, which are pressed to obtain the must. The latter undergoes lower fermentation, is cooked and concentrated. Wine vinegar is then added, at least 10% of the total volume, together with a percentage of vinegar aged for at least 10 years.

Subsequently it undergoes an aging period of 3 years in barrels of various sizes and different woods, before being bottled and marketed.

Tasting notes

It has an intense dark red color, which tends to pitch. During the tasting, acetic sensations are perceived which refresh the palate, accompanied by notes of cooked apples and dried grapes, which add a pleasant sweetness to the overall flavour. In addition, nuances of caramel emerge, which give a taste delicacy, and a subtle hint of sandalwood, which gives a warm and slightly spicy note.
