History
Fabiani winery, located in Porrona – Cinigiano, Tuscany, is a family-run estate dedicated to producing natural wines, respecting local winemaking traditions and emphasizing the region’s historic vineyards.
Grapes used
- 90% Sangiovese
- 10% Ciliegiolo
Production method
- Harvest: Hand-picked between September and October.
- Fermentation: Spontaneous fermentation lasting 30-35 days in stainless steel with indigenous yeasts, without temperature control.
- Maceration: Medium-length maceration on the skins.
- Aging: In cement and stainless steel tanks.
Alcohol content
- 13.5% vol.
Tasting notes
- Color: Bright red.
- Aroma: Austere and enveloping, with notes of plum and black cherry.
- Taste: Balanced, with good structure and persistence, reflecting the typical characteristics of Sangiovese and Ciliegiolo grapes.
