Description
History
Fattoria Le Mortelle is located in the heart of the Tuscan Maremma, just a few kilometres from Castiglione della Pescaia, in an area characterised by its proximity to the sea, Mediterranean vegetation and a long agricultural tradition. The Antinori family’s connection with this land dates back to at least 1863, when a family property document mentioned the Poggio Franco vineyard. From 1999 onwards, the family undertook an ambitious project to develop the estate, investing in its vineyards and building a modern, partially underground winery designed to use gravity during winemaking and minimise environmental impact. The property covers approximately 270 hectares, including 175 hectares of vineyards, with predominantly sandy, silty and clay-siliceous soils. Vivia was created to express the character of Maremma through two traditional coastal varieties, Vermentino and Ansonica, complemented by Viognier, introduced following years of careful experimentation.
Grape variety
Vermentino, Ansonica, Viognier.
Vinification
The 2025 harvest began in early September with Viognier, followed by Vermentino and concluding with Ansonica in the second half of the month. Upon arrival at the winery, the three grape varieties are gently pressed and vinified separately to preserve their individual aromatic characteristics. The musts are cooled to approximately 10 °C for 24 hours to encourage natural clarification before being transferred to stainless steel tanks. Alcoholic fermentation takes place at a controlled temperature of around 16 °C, preserving the grapes’ distinctive aromas. The wine subsequently ages for approximately three months in stainless steel in contact with its lees, developing additional harmony and complexity before bottling in January 2026.

Tasting notes
Bright straw yellow with delicate greenish reflections. The 2025 vintage reveals a refined and harmonious bouquet of white peach, yellow apple and grapefruit, complemented by elegant floral nuances and subtle hints of Mediterranean herbs. The palate is fresh, balanced and smooth, with gentle roundness supported by lively acidity and a pronounced savoury character. The finish is persistent and refined, with lingering citrus notes and delicate hints of fresh almond. A white wine that naturally expresses the brightness and coastal identity of the Tuscan Maremma.
Food pairings
Vivia is particularly well suited to seafood cuisine, from raw fish and tartare to shellfish, molluscs and grilled fish. It pairs beautifully with spaghetti alle vongole, seafood linguine, seafood risotto and fried fish. Its freshness also makes it an excellent match for grilled vegetables, summer salads, fresh cheeses and white meats prepared with aromatic herbs. An excellent aperitif, especially during the warmer months. Best served at around 8-10 °C.
