History
Salcheto is a winery located in Montepulciano, Tuscany, renowned for its commitment to environmental sustainability and innovation. Founded in 1984, the company has adopted organic and biodynamic practices, becoming a reference model for sustainable viticulture in Italy.
Grapes used
- 100% Prugnolo Gentile (Sangiovese)
Production method
- Harvest: Manual selection of grapes.
- Vinification: Spontaneous fermentation in oak barrels with indigenous yeasts.
- Aging: 18 months in oak barrels (70% large casks, 30% tonneaux) followed by at least 6 months in bottle.
Alcohol content
- 13.5% vol.
Tasting notes
- Color: Bright ruby red.
- Aroma: Aromas of ripe cherry, plum, floral notes of lavender, and mineral nuances of crushed rocks.
- Taste: Silky on the palate, with notes of tart berries, pronounced minerality, and a pleasant saline sensation on the finish.
Possible pairings
Pairs perfectly with red meat dishes, game, roasts, and aged cheeses. Also excellent with flavorful first courses of Tuscan tradition.
