Description
History
The San Martino ad Argiano vineyard is located within the municipality of San Casciano towards Cerbaia. The grapes grown are mainly Sangiovese with some small plots of Trebbiano and Malvasia. Chianti Classico was produced for the first time in 2012 with the Riserva mention, and is a “niche” classic Chianti that can be defined as Sangiovese without compromise. Sangiovese here takes on a face that reflects a history made up of millenary traditions, where the purity of the grape is combined with the expert hand of the winemaker Giacomo Chiettini. Very limited production of just over 300 bottles.

Production method
The grapes were harvested manually towards the end of September and then left to dry on bamboo racks for a period of four months. In the following January, both fermentation and refinement in traditional casks were delicately pressed and started, where they remained for the next five years.

Tasting notes
Golden amber color with golden reflections, on the nose the vin santo ranges from dried fruit, raisins, dried apricots and figs. There is also a spicy texture that turns on honey, caramel and sweet toasts, vanilla and tobacco. In the mouth, the vin santo offers an enveloping and velvety sweetness, balanced by a fresh acidity that gives balance to the overall profile. Intense flavors of raisins, honey, toasted nuts and caramel emerge. The persistence is remarkable.
Possible combinations
Recommended pairings: Ideal to be enjoyed alone as a meditation, traditional vin santo pairs beautifully with blue cheeses, dry biscuits, dark chocolate and dried fruit-based desserts. It should be served slightly chilled, at a temperature of around 12-14 degrees Celsius.
