History
Colle del Paradiso is a Tuscan farm that honors traditional methods in Vin Santo production. Selected grapes are naturally dried, and the wine matures in small wooden barrels, following time-honored techniques. This approach imparts distinctive characteristics and a strong connection to the region.

Vinification (and aging)
Grapes are dried on racks for several months, concentrating sugars and aromas. After pressing, the must ferments slowly in small wooden barrels, where the wine ages for years, developing complexity and depth.

Tasting notes
Color: deep amber with golden highlights.
Nose: aromas of dried fruits, honey, sweet spices, and elegant oxidative notes.
Palate: sweet, velvety, with balanced acidity and a long aromatic finish.
Food pairings
Perfect with Tuscan cantucci, blue cheeses, foie gras, or as a meditation wine at the end of a meal.
