Description
History
The Eredi di Cobelli Aldo farm is located in Sorni di Lavis, in Trentino. The family has been cultivating the land since the 14th century and now it is the children who carry on the tradition. The estate has a privileged position with chalk and limestone soils and a microclimate that allows for the production of elegant and fragrant wines. The cellar was created from an old stable and next to it is the tasting room, which was the old family cellar.

Production method
To preserve the integrity of the grapes and allow for a careful selection, the harvest takes place manually and the grapes are carefully placed in boxes. By minimizing contact with oxygen, after a week of maceration on the skins, the must starts fermentation in steel containers. Here it remains until the following summer, going through both winter and summer, to mature and reach the right stability.

Tasting notes
Straw yellow color, enriched by golden reflections. The nose perceives pleasant hints of ripe yellow fruit, such as plums, yellow peaches, grapefruit, apricots and ripe pineapple, accompanied by light mineral notes of iodine. On the palate, it is extremely soft and pleasant, with a pleasantly acidic finish. The olfactory persistence is intense, fruity and long lasting.
Possible combinations
Gastronomic combinations include very spicy and tasty first courses, as well as white meats seasoned with exotic spices, such as curry chicken. Furthermore, it is worth experimenting with some particularly tasty types of sushi.
