Description
History
Eduardo Torres Acosta, a young winemaker born in the Canary Islands and now working in Sicily, created the “Versante Nord” project to valorise small parcels located between 550 and 900 metres elevation on the north side of Mount Etna. These vineyards, mostly bush-trained (alberello) on volcanic soils, are farmed organically and biodynamically, enabling wines with authenticity and a deep sense of place.
Grape variety
Minella Bianca ~60%, other native white varieties (Catarratto, Carricante, Grecanico, Inzolia) ~40%.
Vinification
Hand-harvested grapes, destemmed and gently pressed. Fermentation with native yeasts in concrete tanks without temperature control, skin contact 2-5 days, followed by about 8 months ageing in used oak/tonneaux/barriques/concrete depending on parcel. Bottled without fining or filtration to retain fullness of aroma and integrity.

Tasting notes
Bright straw-yellow colour. On the nose, citrus (lemon, cedar), green apple, Mediterranean herbs, a clear mineral thread and hints of flint typical of volcanic soil. On the palate it’s vibrant, fresh, saline, elegantly structured, with light tannins (from maceration) and a finish that recalls graphite and a slightly bitter aftertaste inviting the next sip.
Food pairings
Excellent as an elegant aperitif, pairs with grilled fish, shellfish, sushi and sashimi, seafood risottos, and first courses with vegetables and aromatic herbs. Also fine with fresh or semi-aged cheeses.
