History
Del Professore is born from a collaboration between Jerry Thomas Speakeasy and the historic Quaglia Distillery. The project’s goal is to produce vermouth entirely from estate-grown grapes and botanicals. The Vermouth di Torino Rosso adheres to the G.I. standard, combining a base wine made from red and white varieties with an infusion of over 50 herbs and spices, followed by barrel aging to achieve roundness and depth.
Composition / Botanicals
A base blend of red and white wine infused with botanicals such as wormwood, gentian, chamomile, orange peel, mint and various spices.

18 % vol
Tasting notes
Amber‑copper in color. On the nose: balsamic notes, candied orange, mint, bitter herbs and hints of vanilla. On the palate: full-bodied, starting sweet but balanced by bitter herbs like wormwood and gentian; persistent finish with clove and gently astringent gentian tones.
Pairing / Usage
Excellent neat over ice or with an orange slice, and superb in classic cocktails (Americano, Negroni, Boulevardier). Use gently in tonic blends to enhance rather than mask. Serve at 6‑8 °C.
