Description
History
Capichera is a Sardinian winery among the most important and renowned in Gallura, located in Arzachena, “set” among the granite rocks of the area. Despite having achieved strong commercial success, the company has remained family-run since the 1970s; its peculiarity was the intuition to enhance the value of pure Vermentino, sometimes vinifying in barrique and giving life to very long-lived wines that improve over time. Over the years, the company has been able to produce interesting wines also based on red grapes, such as Carignano and Syrah, capable of perfectly representing the territory.

Production method
The Vermentino grapes are harvested when they reach optimal polyphenolic ripeness, which usually occurs between the end of August and the beginning of September. After destemming and soft pressing of the grapes, the alcoholic fermentation takes place in stainless steel at a controlled temperature. Malolactic fermentation is instead carried out in barriques. The Vermentino is aged in new and semi-new barriques for 4-6 months.

Tasting notes
Intense straw yellow color with golden reflections. Notes of yellow tropical fruit, intense flint, wild flowers, elderberry, rosemary and wisteria on the nose, with hints of white pepper and vanilla. On the palate it has a good softness, with pleasant notes of ripe fruit and a balanced final acidity. Long finish that recalls spicy and mature notes.
Possible pairings
Capichera Vermentino is a soft and structured white wine, ideal when paired with tasty and well-cooked fish dishes. When necessary and given its great aging potential, Capichera turns into a perfect meditation wine.
