History
The Zýme winery, located in the heart of Valpolicella Classica, precisely in the municipality of San Pietro in Cariano, was born from a history that has roots in an era in which the land was still cultivated following traditions. Founded by Celestino Gaspari, who started as a cellarman, became a consultant and later a wine producer, the company follows a philosophy that focuses on the balance between man and nature, promoting a harmonious and profitable collaboration. The thirty hectares of owned vineyards, distributed in different areas of the Verona area and the province of Vicenza, reflect the diversity of the territory, with its microclimates and unique characteristics linked to each parcel. These vineyards are grown using sustainable agronomic practices.

Production method
These 15 varieties of grapes are harvested based on the moment of optimal ripeness, then they are vinified in steel and concrete tanks, to then mature for 36 months in barrique and subsequently refine in the bottle for at least a year.

Tasting notes
Intense ruby red colour. On the nose it offers a complex aromatic bouquet, characterized by a mixture of floral, fruity and mineral notes. The palate reveals a rich complexity, with an infinite series of sensations that follow one another, in which fruity nuances constantly alternate with spicy perceptions of cinnamon, tobacco and cloves. Its persistence is long, soft and captivating.
Possible combinations
It pairs well with strong-flavored cheeses and meats accompanied by robust sauces. It is particularly recommended in combination with turkey curry.
