Description
History
The Sandro Fay agricultural company was founded in 1973 by Sandro Fay, who decided to develop his family’s wine production business. In 1998 his children Marco and Elena joined the company. The company area covers about 15 hectares of land. Valtellina is the largest mountain terraced winegrowing area in Italy and the indigenous variety grown is Nebbiolo, known as Chiavennasca. The Fay vineyards extend over a total area of about 15 hectares, concentrated above all in the Valgella sub-area. This is one of the five sub-zones of the Valtellina Superiore DOCG denomination and is characterized by small streams called “Valgel”. The soils on which the vines grow are mainly sandy (about 70%) and silty (about 18%), without clay and limestone, with an acid pH between 4.5 and 5.5. Coming from flaked granite formations, they have a thickness that varies from less than 1 meter to a few metres.

Production method
The maceration lasts 7 days, then fermentation in steel vats. The refinement lasts 12 months and is in barrique.

Tasting notes
Garnet red colour. On the nose this wine is characterized by its intense and articulated aromas of ripe red fruit such as cherries and raspberries, accompanied by floral nuances of violet and spicy notes and balsamic herbs. Over time, hints of leather and tobacco also emerge. On the palate, the wine is well structured, persistent and with a great balance between its components. The tannins are present but not aggressive and are perfectly balanced with the acidity, giving a fresh and inviting sip.
Possible combinations
It goes perfectly with red meat dishes, game, aged cheeses and typical Valtellina dishes such as pizzoccheri and venison stew.
