Description
History
The Allegrini family is an important family in the world of wine in the Valpolicella area; documents attest to the presence of the latter in the area as far back as the sixteenth century. One of the prominent figures of the family was Giovanni Allegrini, who began working in the company at a very young age and greatly perfected the art of winemaking. Today the company is expertly led by their children Franco Allegrini and Marilisa Allegrini and their respective children, who follow the path already traced by Giovanni.

Production method
The practice of Ripasso involves the introduction, before aging in the barrel, of the basic Valpolicella wine directly into the vats in which the Amarone was previously pressed. This wine is left to rest in contact with the freshly pressed pomace for a period of approximately 15-20 days. Aging for 11 months in Slavonian oak barrels. This process attenuates the roughness of the wine, enhancing all its organoleptic qualities.

Tasting notes
Intense ruby red color. On the nose notes of plum and cherry jam, medicinal and balsamic herbs, with a subtle nuance of undergrowth and damp earth, accompanied by delicate spicy tones of cinnamon. The sip is full, satisfying and fully satisfies the palate, thanks to an excellent structure
Possible combinations
Ideal in combination with dishes such as stracotti, braised meats, polenta, this wine goes perfectly with a succulent cut of beef with porcini mushrooms.
