History
Antonella Maluli founded the Fattoria La Maliosa with the aim of enhancing the territory of the hilly Maremma through a sustainable agricultural project. Its mission is to enhance the unique characteristics of the area’s pristine and healthy environment. La Maliosa represents for her not only wine and oil, but also the idea of a new agricultural world that respects nature and humanity. She has an entrepreneurial and professional background which also led her to work at the Terme di Saturnia Spa Resort, where she developed the idea of her sustainable project. In collaboration with the agronomist Lorenzo Corino, he has developed innovative agronomic techniques called the Corino Method and has participated in cultural dissemination and training projects in the field of natural viticulture and plant biodynamics.

Production method
The vineyards are located in the Pitigliano area, characterized by volcanic soils and sustainable agricultural practices. The vines, aged between 30 and 35 years, are cultivated at an altitude of about 300 metres; the agronomic management follows the Corino Method, an approach based on plant practices to preserve the soil and plants.
In the cellar, the grapes were pressed and fermented with local natural yeasts, followed by periodic punching down. The maceration lasted three weeks and the wine, including the part deriving from the soft pressing of the pomace, was aged in wooden barrels for about five months. No invasive oenological interventions were carried out, nor were chemicals added, including sulphite (SO2).

Tasting notes
Intense straw yellow with golden hues. On the nose, fruity notes of apple and plum are perceived, accompanied by aromas of wild flowers, sage and marjoram. In the mouth, there is a vibrant and intense acidity, a medium structure and moderate tannins, with a long persistence.
Possible combinations
This wine goes well with seafood appetizers, white meats, oily fish and slightly aged cheeses. It is advisable to serve it slightly cooler than the environment and to aerate the wine for a few minutes before tasting it. It is also suitable for those who follow a vegetarian or vegan diet, as no products of animal origin are used in its production.
