Description
History
The structure of San Giusto a Rentennano is located on the upper course of the Arbia river in one of the southernmost areas of the Chianti Classico denomination. The company stands on an ancient monastery at the time called San Giusto alle Monache which over the centuries was transformed into a fortress. According to some documents, already in 1204 the castle was marked as the border between the countryside of Siena and Florence. Today the structure and the company have belonged to the Martini di Cigala family since 1914 and the crenellations of the fortress, the castle walls and the underground cellars that serve as an aging place for the wines produced are still intact.

Production method
The harvest takes place manually, usually in the month of September when the grapes reach perfect ripeness, indeed they are often harvested with a slight overripeness. The attention to the yield of the grapes is very high, in fact the latter is limited to 0.8 kg per plant; the selection takes place bunch by bunch. The grapes are fermented in enamelled concrete and/or stainless steel tanks for approximately 30-35 days, during which frequent punching down and pumping over are carried out. After the malolactic fermentation has taken place, the wine is aged in 500 l oak tonneaux for about 20-22 months with a further 18 months in the bottle before being placed on the market.
Tasting notes
Dark and intense garnet red colour. Very elegant and complex bouquet on the nose: triumph of sweet spices of cinnamon, black pepper, cloves, toasted coffee and hints of vanilla and licorice, with notes of very ripe fruit such as blackberry jam and berries, potpourri of violets and notes of balsamic and minerality. On the palate the wine is equally complex, elegant and of good structure and softness, alcoholicly warm; on the finish it is counterbalanced by ripe tannins and balanced acidity. The finish is long and complex.
Possible combinations
Percarlo San Giusto a Rentennano is a complex and structured pure Sangiovese, perfect as a meditation wine especially if left to rest for a few years in the cellar. Excellent in combination with important and structured dishes based on red meat or game, or with selections of seasoned and tasty cheeses.
