Description
History
Founded in 754 AD. in defense of the small Romanesque church. The castle was built in the late 900s AD. and was once owned by the Della Gherardesca Counts. Since 1994, 22 hectares of vineyards have been planted, mainly Merlot, Sangiovese, Cabernet Franc and Cabernet Sauvignon, and with a selection of white varieties (Chardonnay, Vermentino and Sauvignon Blanc). The new vineyards have 6,000 to 12,000 vines per hectare, the latter in two blocks planted with Sangiovese and Merlot. Since 1996 the company has applied the principles of organic farming, certified by Bioagricert, and more recently it has embraced the biodynamic approach to viticulture, in order to show even more respect for its pristine nature.

Production method
Alcoholic fermentation in stainless steel at controlled temperature followed by maturation in French oak barriques for about 12 months. After aging in wood, the wine is bottled and further aged in the bottle

Tasting notes
Intense ruby red color, with an elegant and complex bouquet that offers notes of ripe red fruit, spices and a pleasant sensation of vanilla derived from the aging in wood. On the palate, the wine is full-bodied, with an excellent tannic structure which makes it ideal for ageing. It stands out for its freshness and for the persistence of fruit and spice notes in the finish.
Possible combinations
It goes well with meat dishes, especially beef and wild boar, but it also goes well with aged cheeses and mushroom dishes.
