History
The Claudio Cipressi winery, located in San Felice del Molise, is renowned for promoting the Tintilia grape, a native variety rediscovered and championed with dedication. “Non Bermi” represents one of the most authentic expressions of this variety, produced with care and environmental respect.

Production method
Grapes are hand-harvested in the first half of October. After careful bunch selection, fermentation occurs with maceration for at least 12 days at controlled temperatures (25–28°C). The wine matures for 36 months in steel and further refines for 6 months in bottle.

13.5% vol.
Tasting notes

Color: Red with bright garnet reflections.

Perfect with roasts and medium-aged cheeses. Recommended serving temperature: 16–18°C.
