Description
History
Champagne Thierry Fournier is a family-owned estate run by the fourth and fifth generations of winegrowers in Festigny, at the heart of the Marne Valley. The estate farms around 8.5 hectares of vineyards with great respect for the environment. This Blanc de Blancs comes from selected Chardonnay parcels in the villages of Œuilly and Nesle-le-Repons, where marl-rich soils give the wine elegance, refined texture and distinctive minerality.
Grape variety
100% Chardonnay.
Vinification
The wine is produced from a 2012 base vintage blended with approximately 20% reserve wines. Fermentation takes place in stainless steel tanks, followed by traditional bottle fermentation and ageing on the lees. The Extra Brut dosage (5 g/L) enhances the precision, freshness and mineral character of the Chardonnay.

Tasting notes
Brilliant golden yellow with a fine, persistent mousse. The nose reveals citrus fruits, white flowers, apple, pear and delicate pastry notes. On the palate it is fresh, creamy and beautifully balanced, combining vibrant minerality with elegant texture and a long, saline, citrus-driven finish.
Food pairings
Excellent as an aperitif, it pairs beautifully with oysters, shellfish, seafood tartare, sushi, fish carpaccio, baked fish, seafood risotto, fresh cheeses and delicate vegetable dishes.
