Description
History
The Chiarli family has been producing wines in Emilia for five generations, with the first documents and honorable mentions dating back to 1860-1900. In the first 50 years of the 1900s, the second generation of the family worked very hard to spread Lambrusco and its knowledge in Italy and abroad; the historic Modena Cellar was created in 1925, which still today, albeit restructured, is the historic headquarters of the company. With the advent of the third generation, large autoclaves began to be introduced for sparkling wine with the Charmat method for controlled temperature, which will allow for more fruity and delicate wines to be obtained; it’s circa 1970. With the fourth generation we see the birth of the Lambrusco DOCs and the confirmation of the high quality standards that allow the company to distinguish itself from the main competitors, also keeping faith with the original principles dictated by Cleto Chiarli. In 2000 the Cleto Chiarli project was created and the Lambrusco Premium, Vigneto Cialdini and Lambrusco del Fondatore labels were launched, able to “tell” Lambrusco in all its nuances.

Production method
The grapes undergo a soft pressing process, to then be added with selected yeasts. Subsequently the fermentation takes place in an autoclave according to the Charmat-Martinotti sparkling method.

Tasting notes
Light straw yellow colour, persistent foam. On the nose fresh yellow fruit, white peach, apple and lime peel, with small hints of yeast. In the mouth enveloping, soft and lively, with a medium body and a good final acidity.
Possible combinations
“Blanc de blancs” is ideal as an aperitif on warm spring/summer evenings. Perfect pairing with seafood appetizers, grilled fish or tasty white meat dishes.
