Description
History
Cantina di Santadi was founded in 1960 by a group of grape producers in Sardinia. Initially they concentrated on the production of bulk wine, but the qualitative turning point came with the advice of the oenologist Giacomo Tachis in the 80s. From that moment on, the winery has seen its reputation and the prestige of its wines grow, such as the Carignano vinified in barrique and the Sardinian Vermentino, which fully express the territory and are highly appreciated all over the world.

Production method
The grapes are vinified with the classic method in white, fermentation at controlled temperature for about a week and aging on the fine lees for 6-7 months. The wine is bottled and refermented in the bottle with selected yeasts at 12°C for 40 days and remains aged with remuage for 18 months. The wine is then disgorged, aged for another 6 months and marketed.

Tasting notes
Brilliant straw yellow with golden reflections, fine and persistent perlage. The perfume has fruity citrus notes, a large and intense iodized minerality, hints of hawthorn and notes of bread crust, yeast and melted butter. In the mouth the sip is creamy and enveloping, soft and elegant, balanced by acidity and marine minerality. The finish refers to hazelnut and is long and pleasant.
Possible combinations
Solais” Classic Method of Vermentino is perfect as an aperitif or to toast a special occasion. Classic method capable of representing the austerity and warmth of the Sardinian lands, well balanced between lively fruity notes and minerality. As a pairing we see it well with a first course with seafood even a little fat and tasty or with tasty and creamy cheeses.
