Description
History
Casa Caterina is a small winery, managed by the Del Bono family in Monticelli Brusati, in Franciacorta. Today those responsible for producing excellent quality wines are Aurelio and Emilio, Caterina’s sons, who have taken over the reins of the company thanks to their knowledge regarding the field of viticulture and oenology. In terms of production, Casa Caterina is very limited, but every year what is produced is of an extraordinary quality, wines that compete with the large companies of Franciacorta. In fact, over time, Casa Caterina has revealed itself to be an astonishing reality, also for their method which concerns the bubbles which must rest for 48 to 60 months, not a month more nor a month less.

Production method
The harvest of the grapes is carried out strictly by hand in boxes; the fermentation takes place spontaneously in steel, the second fermentation is in the bottle according to the classic method through the use only of must. For all its winemaking, Casa Caterina has very rigorous methodologies and processes, including manual disgorgement, no dosage and no addition of sulfur dioxide for the Cuvée 36 Mesi. This is then followed by aging on the yeasts for 36 months.
Tasting notes
At sight, the product has a deep, golden yellow colour. The perlage is fine and persistent. On the nose notes of candied orange, lime peel, elderflower and peach, yellow peach, bread crust, dry pastry and melted butter, accompanied by abundant flint and minerality. In the mouth it is fine, soft and enveloping, counterbalanced by a lively acidity and a pungent minerality. The finish is also long and pleasant, with references to pastry making.
Possible combinations
Very balanced, it manages to delight the palate thanks to an extraordinary softness combined with complexity. Ideal for toasts and evenings with friends, to be combined with fatty and unctuous first courses or with delicate and tasty fish dishes.
