Description
History
Scapa Distillery is a historic Orkney distillery in Kirkwall on the Mainland. This is famous for having been an important base of the British Royal Navy. It was founded in 1885 by two Scottish distillers, Townsend and MacFarlane, who equipped it with very innovative technologies for the time, it has then experienced ups and downs over time and overcome some closures. Today it is conducted by 5 Scottish artisans coordinated by master distiller Brian MacAulay; the distillery absolutely does not use peat for drying the cereal, since the corporate style requires that the products absolutely must not be smoked in any way.
Production method
The process begins with malting the barley, during which the starches present in the cereal are broken down into simple sugars suitable for alcoholic fermentation. This takes place in three phases: the maceration of the barley in water, germination and drying. Subsequently, the barley is ground and added again with hot water, extracting the wort which will be fermented and distilled. The final refinement, including the choice of the right wood, is essential for the sensations that the distillate will acquire.

Tasting notes
Light amber yellow colour. On the nose notes of white flowers and pulpy exotic fruit, citrus fruits and wild herbs, with a marine wind finish. Elegant, silky and broad on the palate, with a medium structure and a longer finish that returns to the salty notes.
Usage
Perfect at the end of a meal or as a meditation; particularly recommended for lovers of particular and elegant whiskeys.
