Description
History
“Latinia” is Santadi’s late‑harvest expression, applying natural grape drying on the vine to pure Nasco fruit. It is one of the winery’s most distinctive wines, sourced from selected vineyards in Sulcis on sandy soils. The late harvest and barrel aging process add layers of complexity, and it’s often featured in premium tastings paired with local cheeses at the Santadi estate.

Vinification
Grapes are harvested late, often with repeated passes through the vineyard to select the best overripe berries. The must ferments slowly in stainless steel with selected yeasts until fermentation stops naturally. It is then aged several months in third‑use barriques before bottling.

Tasting notes
Deep amber color. On the nose: honey, caramel, candied orange peel, vanilla, and clove, with citrus hints. On the palate: full and round, with balanced structure, enveloping sweetness that never becomes cloying, and a long, persistent finish with saline and citrus echoes.
Food pairing
Perfect with dry pastries, almond cake, fruit tarts, blue cheeses, foie gras and sophisticated desserts. Serve at 14‑16 °C.
