Description
History
Produced at Firriato’s Cavanera estate on Mount Etna’s north side, this red is the hallmark of the “Le Sabbie” range. Crafted with precision and a clear sense of terroir, it showcases the elite quality of Etna DOC.
Grape varieties
Nerello Mascalese ~ 80–90%, Nerello Cappuccio ~ 10–20%
Vinification
Fermented in stainless steel at ~26–27 °C for 14 days, followed by malolactic in Slavonian oak, and aged 12 months on lees in 12‑hl barrels.

Tasting notes
Ruby red with violet hues. On the nose: volcanic minerality, blackcurrant, sour cherry, plum, licorice, pepper and dried violet. Palate: balanced with vibrant acidity, soft tannins and a long, juicy finish.
Food pairings
Great with grilled red meats, game, meat ragù pasta, mushrooms, and aged cheeses.
