History
The Azienda Agricola La Cerbaiola, owned by Giulio Salvioni, is located in Montalcino and is renowned for producing high-quality wines, particularly Brunello and Rosso di Montalcino. The Salvioni family has a long winemaking tradition, characterized by meticulous attention to quality and respect for local traditions.

100% Sangiovese Grosso
Production method
Harvest: Manual harvest in late September – early October, with careful grape selection.
Vinification: Spontaneous fermentation in 35-40 hectoliter stainless steel vats for about 28-30 days, with frequent pump-overs and délestage to control temperature and enhance extraction.
Aging: 12 months in large 18-22 hectoliter medium-toasted Slavonian oak barrels, followed by a period of bottle aging before release.

14% vol.
Tasting notes
Color: Bright ruby red.
Aroma: Intense fragrances of forest floor with evident red fruits and ripe cherries, accompanied by floral and spicy nuances.
Taste: Juicy on the palate, with crisp and persistent fruit. It shows great character with a dense yet silky tannic structure, balanced by pronounced acidity that imparts finesse and balance.

Pairs excellently with traditional Tuscan meat dishes, grilled meats, and medium-aged cheeses.
