History
Produced by Torre alle Tolfe, a certified organic estate about 3 km from Siena, planted on sandy soils rich in marine fossils. Vines are organically farmed and fermentation is spontaneous in cement—embracing a natural, sustainable philosophy

Vinification
Gentle pressing, ~4 hour pre-fermentation maceration for color and aromatic extraction, spontaneous fermentation in cement, no oak influence to preserve freshness and aromatic clarity

Tasting notes
Deep coral-pink; aromas of white peach, elderflower, orange blossom, jasmine and a hint of bitter orange. On the palate: fresh, savory, well-balanced, with a citrusy, slightly saline finish.

Ideal with seafood starters, vegetarian dishes, salads, roasted fish, poultry and fresh cheeses. Also great for casual gatherings and convivial tasting moments.
