Description
History
Winemaker Jérôme Prévost works a single parcel at Gueux, at the base of the Petite Montagne de Reims, growing exclusively Pinot Meunier and embracing a radical philosophy: one terroir, one grape, one cuvée. Grapes are hand-harvested from historic vineyards cultivated with artisanal methods. Winemaking includes oak fermentation, blending with reserve wines (~20 %), and extended ageing on the lees (30+ months) to achieve nuance and length. The result redefines what Pinot Meunier can deliver in terroir-driven Champagne.

Vinification
Soft pressing, spontaneous fermentation in French oak barrels, blending with about 20% reserve wines, second fermentation in bottle and 30+ months ageing on the lees. Extra Brut dosage (~2 g/l) to preserve structure and freshness.

Tasting notes
Pale straw yellow with gold highlights and ultra-fine persistent bubbles. On the nose: crunchy apple, pear, candied citrus, bread crust, delicate spice and chalky minerality. The palate is generous yet focused: creamy mousse, lively acidity, white fruit, long savoury finish. A deep and sophisticated Champagne.
Food pairings
Perfect as an extraordinary aperitif or to commemorate special moments. Excellent with seafood tartare, oysters, sashimi, butter-based risottos, white-truffle dishes, soft cheeses. Also perfect for vertical tasting sessions or as part of a cellar dedicated to terroir-champagnes.
