Didier Dagueneau is an authentic symbol of the Loire region, who knew how to value the art of high quality viticulture, despite the trend towards mass production, and passed on his philosophy to his children, Louis-Benjamin and Charlotte, who today they manage the cellar. It is obvious that great efforts and meticulous care of the vineyard, where no chemical or synthetic substances are used, and of the cellar, where spontaneous fermentation is adopted, are required to obtain excellent results. These wine jewels combine tension and elegance, embodying the concept of terroir, so precious to French winemakers. Absolutely unique and not to be missed.
It is produced with Sauvignon grapes from vines over 60 years old, on siliceous soils of Pouilly Fumè. Biodynamics guides the cultivation of the vines, giving the wine a unique flavour. After manual harvesting, the grapes ferment spontaneously. Part of the wine ages in steel, part in oak barrels. During the six-month aging on the fine lees, the wine develops aromatic nuances.
Lively straw colour. On the nose, it offers an intense fragrance with citrus notes, flint, exotic fruit and a subtle vegetal vein. On the palate, it reveals balance between richness and freshness, with a prolonged persistence thanks to the saline note. A work of art to appreciate.
It pairs beautifully with fresh oysters, creamy goat cheeses, grilled fish and citrus dishes.
